I have just spent the most glorious 3 days in the blue mountains of NSW at the most recent Local is Lovely Pracshop.  Spending a few days each year totally immersed in food and photography is like a fire to my soul.  Not only did I get to hang out and learn from my absolute food and lifestyle photography role model Luisa Brimble, I also had the pleasure of meeting and more learning from styling and blogging superstar Aran Goyoaga of Canelle et Vanille and absorbing and being around the warm and most gracious host Sophie Hanson – 3 perfect days that will remain with me as an absolute highlights for 2015.

I took well over 1500 photos in the 3 days which I will share with you in the coming weeks and months – I have long wanted to just post a photo a day that shows what I see when I push that little black button.  This year has seen a number of photo shoots that I am still to share as long blog posts are something I no longer have time for so I will now take the opportunity to post regular images that are favourites from the past few months.

Yesterday I posted photos on instagram of these delicious Banana, Date and Walnut Muffins I had just whipped up.  One of my followers then asked for the recipe so I thought I would also share it here – I am lucky to own a thermomix which makes cake mixing super easy – throw it all in the bowl and whizz it together!  These ones were made with wholemeal spelt flour but I do usually use gluten free flour – either way they are delicious! Sweet-Style-1889Sweet-Style-1895Sweet-Style-1905

Banana, Date & Walnut Muffins

Ingredients
  1. 2.25 cups flour (I use gluten free or wholemeal spelt)
  2. 2 tspn baking powder
  3. 1/2 tspn bicarbonate soda
  4. pinch salt
  5. 300ml milk
  6. 2 eggs
  7. tspn vanilla extract
  8. 3/4 cup rad adults sugar
  9. 125g melted butter
  10. 1-2 mashed bananas
  11. 1 cup of dates chopped
  12. 1 cup of walnuts
  13. Chia seeds for sprinkling on top
Instructions
  1. Combine all the ingredients in a blender or thermomix then add the banana, dates and walnuts.
  2. Spoon into the muffin tins then add more walnuts and chia seeds to the top
  3. Bake at 190 deg for 20-25 min
  4. ENJOY

I am pretty much obsessed with Wellness Cookbooks these days!  I am sure a new one is released each week and I am there snapping it up within a few days! 

My current favourite is The Healthy Life by Jessica Sepel.  Good good stuff in here.  

I whipped up some porridge last week using a bit of a combination of recipes from the book.  I an a non gluten or wheat eater so don’t tend to do breakfasts like this very often (it is usually bacon and eggs at our place!).  I combined the peanut butter and banana porridge with the sticky date porridge to get a Sticky Peanut butter, Banana and Date Porridge!    Mine was made with quinoa flakes and homemade almond milk – So delicious!

Sharing one of my favourite protein bliss ball recipes today!  I whipped these delicious bites up in my thermomix last week and they will keep in an air tight container for a few weeks!  Enjoysweetstyle-0770 sweetstyle-0777 sweetstyle-0712

 

Cacoa Chia Bliss Balls

Ingredients
  1. 2 cups almonds/walnuts
  2. 1.5 cup dates
  3. 1 tsp vanilla
  4. 2.5 tbls cacoa
  5. 2 tbls chia seeds
  6. 1 tbls coconut oil
Instructions
  1. Blend all together in thermomix or blender
  2. With a tablespoon scoop out mixture and roll into large balls
  3. Keep in airtight container for 2-3 weeks (if they last that long)
